It's easy to make packed full of vege's and the kids love it

Ingredients

  • 500g Beef mince
  • 1/2 medium brown onion, diced
  • 2 cloves of garlic, crushed
  • 1/2 Red capsicum, diced
  • 6 Mushrooms, sliced
  • 1 Carrot, grated
  • 1 Zucchini, diced
  • 100g Green beans, thinly sliced
  • 3/4 cup Peas
  • 1-2 Chorizo, sliced
  • 1 cup Basmati rice
  • 1 cup Water
  • 2 x 400g Diced Tin tomato
  • 2 tsp Mixed herbs
  • 1 Bay leaf
  • 1 Tsp salt and pepper
  • 1 tsp ground chilli (optional)
  • 1 cup Tasty cheese, grated ( to serve)

Step 1

Heat 1 tablespoon olive oil in 30cm square roaster, sauté onion and garlic

Step 2

Add mince and chorizo to brown

Step 3

Once meat has browned, cook off your capsicum, mushrooms, and beans until slightly softened. Then add your zucchini and carrot

Step 4

Add the basmati rice to your meat and and vegetable mix, and stir through for approx 1 minute

Step 5

Mix through your liquids ( water and tin tomatoes) season with your herbs, chilli, salt and pepper, stir until combined and bring to the boil.

Step 6

Once boiling, reduce heat to low and cover. Leave to simmer for approx 20 min or until the liquid is absorbed and rice is cooked

Step 7

Serve hot topped with grated cheese

Chef's Tips

I like to add my peas about 10 min before dish is cooked
