15 minute Stove-top Roasted Veggies

Super quick and easy recipe on the stove!

Ingredients

    Step 1

    Chop all veggies (except onion) into 2-3cm pieces, chop onion in quarters, leave garlic with skin on.

    Step 2

    Heat 2-3 Tbs oil into the Saute Pan on medium heat. Add all veggies and stir.

    Step 3

    Add 1 Tbs Moroccan Spice Blend, stir veggies and coat with spice.

    Step 4

    Cook on low-medium heat with the lid on and steam vent open for 10-12 minutes until vegetables are tender.

    Step 5

    Remove lid and allow to crisp and brown for approx 5mins

    Love this, always easy when time is not on my side or I am having a lazy night and don't want mash. Have added some balsamic to vegies to change it up from morrocan spice.

    I found this to be a good recipe but it needs at least minimum 15 mins stove top time and 5 mins witout lid. That is 20 mins. The veggies otherwise turn out mushy but it was still very tasty.
