Very light and crispy. Doesn't even register on your guilty conscience.


  • 1 1/2 almond flakes
  • 3 egg whites
  • 2 Tbs melted butter
  • 1/3 cup Caster sugar
  • 1/4 cup Plain flour

Step 1

Whisk together egg whites and sugar to form soft peaks

Step 2

Fold in flour and melted butter, than almond flakes

Step 3

Preheat oven on 160°C (fan forced)

Step 4

Spread the mixture thinly on the Cookie Tray in circular disc around the size of your palm, making sure no almond flakes overlap. Yes, we want it paper thin.

Step 5

Bake for 15 min or until golden.

Step 6

After you remove them from the oven, wait for 1 minute before transferring crisps to cooling rack

Chef's Tips

The critical part is to spread the mixture as thinly as possible, otherwise, they become rock hard almond brittles.
