A healthy take on the classic chicken parmy that the kids will love.


  • 1 Red capsicum, diced
  • 1/2 Onion, diced
  • 2 cloves Garlic, minced
  • 1 400g can Tomatoes, diced
  • 1/4 tsp Chilli flakes
  • 2 Chicken breasts
  • 1/2 cup Parmesan, grated

Step 1

Heat oven to 200C.

Step 2

Saute capsicum and onion in olive oil over medium heat until soft (about 5 minutes).

Step 3

Add garlic, chilli and tomatoes and saute for 2-3 minutes.

Step 4

Slice chicken breasts in half horizontally to give thin fillets. Arrange evenly over the pan and push down to be partly covered by tomato sauce. Saute for 3 minutes.

Step 5

Sprinkle parmesan over each breast fillet and place pan in oven. Cook until breasts are just tender (about 6-8 minutes).

Step 6

Serve each fillet with greens and potatoes - mashed or sliced thinly and baked for healthy chips.
