So easy, moist and delicious! You will struggle to stop at just one!


  • 1 1/2 cups Self raising Flour
  • 1/4 tsp bi-carb soda
  • 1 cup very ripe banana (about 3 bananas)
  • 1 cup Caster sugar
  • 2 Eggs, large
  • 125g Butter, softened
  • 100ml or 1/2 cup Milk
  • 1tsp Vanilla extract

Step 1

Heat oven to 175C

Step 2

Mix together the flour and bicarb in large silicone bowl

Step 3

Puree banana in a food processor. Add the sugar and eggs and whiz together. Add the butter and whiz until creamy. Add milk and vanilla and whiz until combined.

Step 4

Scrape out and fold gently through the flour mixture.

Step 5

Pour the batter into 12 cup muffin tray (or other silicone mound). Bake for 25 minutes or until muffin springs back when lightly pressed.
