I have been making this dish for close to 20 years after a friend shared it with me. I used to do it in the oven until I became the owner of a Square Roaster. Now it is done on a low heat on the stove top.
Heat Square Roaster on stove top on a medium heat for 5 minutes
Add small amount oil and brush over base
Add chicken drumsticks
Add sliced onion
In small red silicon bowl (Chefs Toolbox) combine all other ingredients excluding snow peas.
Pour over chicken
Place lid on roaster
Once sauce is hot and bubbling turn roaster to low and gently cook for one hour.
Prior to serving add fresh snow peas and leave covered for 5 minutes
Then serve on a bed of basmati rice
For a pressure cooker version substitute drumsticks with thigh fillets (skin and fat removed) Cut each fillet in half to make good portion sizes Cook for 20 minutes at pressure Release pressure, add snow peas and other vegetables if desired then replace pressure cooker lid, bring back to pressure and cook for 2 minutes. Quickly release pressure again for deliciously blanched vegetables.
