Preheat the oven to 180°C for 15 minutes.
Heat 6L Dutch Oven over medium heat for three minutes.
Trim the scotch fillet of any excess fat. Rub with oil and then roll in herbs, salt and pepper. Seal fillet on both sides in hot pan.
Peel the onions and cut into sixths. Place onions, bay leaves and garlic around the fillet. Pour the white wine over. Cover pan with lid place in the oven. After one hour, turn pork and braise for a further hour.
Remove from the oven, pour over the remaining wine, replace the lid and rest pork for 15 minutes.
Serve sliced; moistened with the juices, together with boiled potatoes, steamed green beans, and accompanied by a light red wine such as pinot.
Slice leftover pork fillet for a delicious sandwich or shred through a tasty risotto!
