Brioche & Blueberry Pudding

This Brioche & Blueberry Pudding is a delicious winter dessert that is perfect for those colder nights. The family will be begging for seconds!

Blueberry Pudding

Ingredients

  • 1 panettone or 750g brioche loaf. Use cafe raisin bread if necessary.
  • 6 egg yolks
  • 3/4 cup sugar (white or caster)
  • 3/4 cup Brown sugar
  • 1 tsp Vanilla
  • 3 cups Milk
  • 1 cup blueberries (frozen or fresh)

Step 1

Turn on the oven to 170°C

Step 2

Cream the yolks and both sugars with a whisk in the silicone bowl

Step 3

Whisk in the milk and vanilla

Step 4

Pour into a saucepan and bring to a gentle simmer for 5 minutes, stirring occasionally.

Step 5

Arrange 1/2 the panettone in one layer in the saute pan

Step 6

Evenly sprinkle blueberries over the panettone

Step 7

Layer the remaining panettone in the saute pan

Step 8

Pour the custard mix over the panettone, making sure to moisten the entire top layer

Step 9

Bake uncovered in the oven for 30-35 minutes

Chef’s Tips

You can add sprinkles of dark chocolate along with the blueberries. Serve with ice cream.
