I love this recipe because it's so versatile. It can be used as a snack or lunch/dinner. It's a very easy finger licking crowd pleaser. It can be finished up in the oven or on the BBQ.


  • 2 Slabs of Pork Short Ribs
  • 4 Tablespoons TCT Cajun Spice Mix
  • 3 Cups Water
  • 5 Cloves of Garlic (Crushed)
  • 2 bay leaves
  • 3 cm Ginger (Finely Grated)
  • 1 Cup BBQ Sauce of your Choice
  • 1 Cup Tomato Sauce
  • 4 Tablespoons Dark Brown Sugar

Step 1

Cut Ribs into pieces of 2-3 ribs.

Step 2

Place 4 Tablespoons of Cajun Spice Mix into 7 Litre Pressure Cooker.

Step 3

Rub the backs of the Ribs in the Cajun Spice Mix to coat and set aside.

Step 4

Add to the left over Cajun Spice Mix in the Pressure Cooker - water, crushed garlic, bay leaves and finely grated ginger.

Step 5

Lay the Rib pieces as flat as possible in the Pressure Cooker.

Step 6

Lock Lid and bring to Pressure on Setting 2, on high heat.

Step 7

Once at pressure, turn heat to low and cook for 15 minutes. Push to back of stove and let come off pressure naturally.

Step 8

Place Ribs in Saute Pan.

Step 9

Reserve 2 Cups of the Rib Stock and return it to the Pressure Cooker.

Step 10

Add BBQ Sauce, Tomato Sauce and Dark Brown Sugar and bring to boil.

Step 11

Reduce heat and simmer for approx. 5 minutes or until it gets thicker.

Step 12

Ladle sauce over Ribs and place in oven for approx. 30 minutes. Serve.

Step 13

***** Alternatively if you wish to serve these ribs at a BBQ. Instead of placing in the over then thickly paint the ribs and char grill on the BBQ then serve.

Chef's Tips

Serve with Potato Salad or other sides.
