So easy great to freeze can be made gluten free

Ingredients

  • 600g Cauliflower
  • 1 Onion, finely diced
  • 1 clove fresh garlic, crushed
  • 8 Short Bacon, diced
  • 2 Zucchini, grated
  • 2 Carrot, grated
  • 3 Egg, lightly beaten
  • 1-1 1/2 cups Wholemeal flour
  • salt and pepper
  • 1 cup grated parmesan cheese
  • 3/4 cup Tasty cheese, grated

Step 1

Place cauliflower into food processor and blitz untill it resembles fine bread crumbs place in bowl.

Step 2

Grate zucchini and carrots and squeeze out excess water place in bowl with cauliflower

Step 3

Place cheese's salt and pepper and flour in bowl

Step 4

Add the lightly beaten egg and stir well

Step 5

Heat sauté pan up add a little rice bran oil then scoop out mixture to as big or little as you like cooking each side for 2-3 mins

Chef's Tips

Great frozen. If mixture isnt wet enough add 1/4 cup of water.
