Add two cups of water to the pressure cooker and set aside. Chop peaches into small pieces - drain pitted cherries. In a mixing bowl, whisk the eggs, sugar and vanilla Next, add the flour and milk. place springform pan on top of silicone basket. Pour the mixture, and then sprinkle the fruit into the mixture evenlty. Cover tightly with tin foil. Close and lock the lid and bring to pressure on setting 2. When the pan comes to pressure, lower the heat and cook for 18-20 minutes. When time is up, slowly release pressure by opening the steam release valve. Check for doness by slipping a toothpick in the center of the dessert. If the toothpick comes out dirty, then the dessert needs more cooking time close and lock the lid again and let the residual heat of the pan keep cooking it. When it is ready, remove the springform pan from the pressure cooker, let it cool and then unclip the springform pan & remove silicone edge. Move to a serving dish and sprinkle with icing sugar right before serving. Serve warm or chilled.
Any fruit can be used - traditionally a red fruit, so strawberries, raspberries, blackberries or even blueberries
