Super easy and super yummy!
Heat oil in pressure cooker and add onion garlic, sauté for 1 minute.
Add chicken and sauté for 2 mins
Add pumpkin and rice. Sauté for 1 minute
Add wine, then add hot stock, then just before boiling, add pine nuts! Close pressure cooker lid and set to setting 2
Once at pressure, turn to low heat and cook for 8 minutes
Once cooked and you've released the pressure, stir and add the spinach and Parmesan cheese
Serve with a dollop of basil pesto
