Chicken Yiros Pizza

We love Yiros pizza and this is easy to make. Even the kids join in. Simple and delicious.

Ingredients

  • 1 Cup SR flour
  • 1 Cup Plain flour
  • 1 teaspoon Honey
  • 1 teaspoon Dried Yeast
  • pinch of Salt
  • 100g Sundried Tomato Strips
  • 1 Cup baby spinach leaves
  • 1 tub tzatziki dip
  • 1/2 Cup grated cheese
  • 1/2 Onion, sliced
  • 2 satchets (100g) pizza sauce tomato
  • 1 chicken breast diced
  • 2 heaped Tablespoons Nostimini Spice ( Gaganis Bros )
  • 1 teaspoon Olive oil
  • 1.5 cups Luke Warm Water

Step 1

Mix together both flours, yeast, honey, water and pinch salt in square roaster pan. Press dough out until the base of the pan is covered.

Step 2

Spread the sauce over the dough, taking as close to the edge as possible.

Step 3

Get a plastic zip lock bag and place the diced chicken (2cm pieces) and the Nostimini spice and shake until covered.

Step 4

Add the olive oil into a pan and Brown chicken then set aside, to slightly cool.

Step 5

Place a layer of sliced onion, sundried tomato strips, baby spinach leaves, chicken and then layer the cheese evenly over the top of the pizza.

Step 6

Place the pan over medium heat and cover, with vents closed. Cook for 5 minutes.

Step 7

Use a trivet or pot handle cover to make an air opening in the pan and reduce heat to medium-low and cook for a further 15 minutes or until cooked.

Step 8

Use egg flip to remove pizza to chopping board.

Step 9

Put the tzatziki dip in a zip lock bag, cut off the corner and use as a piping bag. Swirl in a spiral pattern over the top of the pizza, cut and serve immediately.

Chef's Tips

You can use lamb or beef instead of chicken if you prefer.

Great recipe, lots of flavour, you can use the chefs toolbox inspiration cajun spice blend as a substitute for the nostimini spice, did it on the weekend, worked great. The recipe is also missing 1 cup luke warm water. For the base.
