A light & flavorsome simple one pot cake, with a delicious summery twist!

Ingredients

  • 125 g Butter, melted
  • 1 1/2 cup self-raising flour (gluten-free flour optional)
  • 1/2 Cup Coconut Flakes or Dessicated
  • 1 Cup Castor sugar
  • 2 Eggs
  • 1 Cup Milk
  • 1 Zest of 1 Orange or Lemon

Step 1

Heat oven to 170

Step 2

Melt butter in Saute Pan on stove top

Step 3

Add all other ingredients, stir well

Step 4

Place in oven uncovered for 25 minutes or until skewer comes out clean and slightly golden on top (let cool in pan)

Step 5

Turn out using Saute Pan lid and slide onto serving plate and dust with icing sugar if desired, served hot or cold

Chef's Tips

Can be made in Klugelholf or other Silicone Mould (may take 35 minutes as batter is more dense in a smaller shape)
