Cranberry Seasoned Turkey Roast

An easy traditional roast with a Christmas twist


  • 1 small onion, diced
  • 2 bacon rashers, diced
  • 70g fresh breadcrumbs
  • 8 Sage leaves, chopped
  • 100g raisins
  • 1.6kgs turkey breast - boned, skin on
  • 250ml chicken stock
  • 1 cup cranberry sauce
  • 1 tsp Worcestershire sauce
  • 7-8 prosciutto slices

Ask your poultry supplier to bone the turkey breast for you

Step 3

Preheat the oven to 180 degrees. Heat the oil in the Frypan over medium heat for 2 minutes

Step 4

Cook onion and bacon for 5 minutes, stirring occasionally. Transfer to a clean Silicone Bowl to cool.

Step 5

Add breadcrumbs, sage, raisins, salt and pepper to onion mixture and stir well to combine

Step 6

Lay turkey out on an Acacia board skin side down

Step 7

Place a piece of plastic wrap over flesh and pound with a rolling pin to form a rectangle. Remove wrap.

Step 8

Place stuffing mix at one end of the rectangle. Roll up as tightly as possible, cover with strips of prosciutto and tie at intervals with kitchen twine

Place in Roaster and cover with lid. Place in over for 1 hour. Remove the lid and cook for a further 15 minutes.

Combine stock, remaining prosciutto, cranberry and Worcestershire sauce in Frypan and stir over medium heat until slightly thickened

Taste and season with salt and pepper

Cut string from turkey roll and discard

Slice and serve the turkey with roasted vegetables, turkey gravy and salad.
