A delicious & quick soup, that's packed full of flavour!


  • 4 French Shallots
  • 2 Garlic clove, peeled
  • 4 Zucchinis, cut into halves
  • 1 Optional rash of bacon
  • 2 tbsp Olive oil
  • 300 ml vegetable stock (or a cube and water)
  • 1 tsp Honey
  • 250 ml Cream (or to your liking)
  • salt and pepper

Step 1

Insert the 'Multi Blade' in the bowl. Add the shallots, garlic and Optional bacon, Pulse for 5-10 seconds, open and scrape down. To add depth of flavour fry off ingredients - set Time for 3 minutes, Temp 105c, Speed 1. Start

Step 2

Add zucchinis. Close the lid and press Pulse for 5-10 seconds. Open and scrape down.

Step 3

Add the olive oil and vegetable stock to the bowl. Close the lid. Select BOIL P1 and press Start to confirm (20 minutes).

Step 4

Press cancel to exit keep warm mode. Add the honey and cream and some salt/pepper. Set the timer to 3 minutes, press Start and slowly bring the speed up to 10. Serve immediately with crusty bread

Chef's Tips

Note: French shallots look like brown onions and are usually found next to the onions in your supermarket. If unavailable regular shallots work. Of course to make this vegetarian leave out the bacon.
