I saw this made on a cooking show and decided I could double it for our square roaster and it's fabulous! I use GF pasta and flour but with normal flour and pasta it's just as good....Super tasty, easy and great for the whole family!
Bring a large pot of salted water to the boil.
Slice the cauliflower across the whole head to approximately 1 cm thick slices. Also keep the young leaves for the cauliflower. Blanch the cauliflower slices and leaves for 5 minutes, scoop out and set aside.
Bring water back to boil and cook pasta for recommended time.
While pasta is cooking melt oil and butter in brazier (medium size pot).
Add finely chopped red onion and crushed garlic to brazier and soften, add curry powder to taste.
Mix milk and cream together in a jug and while using a whisk to bring together add slowly to the flour mixture. Continue to cook the sauce at a low-medium heat to bring it together and thicken. Add the cheese prior to adding the sauce the the pasta and tuna.
Mix the cooked and drained pasta with the drained tuna in a large bowl. Add most of the curry sauce and gently mix through.
Start piling into the square Roaster adding the cauliflower slices (stand them in the pasta) and the cauliflower leaves. When all the pasta, tuna and cauliflower is in the square roaster pour over the remaining curry sauce.
Sprinkle with breadcrumbs and parsley and sprinkle a little olive oil over the top.
Cook in med/hot oven 20-25 minutes of until lightly browned on top and heated through.
I substitute normal pasta with GF pasta and I also swap out the flour and use GF plain flour.
