These muffins are a lunch-box favourite and perfect for afternoon tea.
Preheat oven to 180°C
Cream butter and sugar together. Add eggs, one at a time, whisking well to combine.
Add buttermilk and whisk to combine.
Sift in dry ingredients, mix well with silicon spatula.
Add dates and apple, mix well.
Spoon mixture into Muffin Tray evenly.
Bake for 20minutes or until firm to touch, cool for 15 minutes before turning tray over to remove muffins.
