this is a winner for all occasions. Its so quick I can make it before school for the kids lunch, and they love it!

  • 6 Eggs, large
  • 1 medium onion, diced
  • 75g Danish feta crumbled
  • 2/3 cup milk
  • 1/2 Cup self-raising flour, gluten-free flour optional
  • 4-6 Slices Ham
  • 1 Handful baby spinach leaves, slightly chopped

Step 1

Put 2 cups water in the pressure cooker and bring to boil

Step 2

In a large silicon mixing bowl whisk the eggs and milk. Add the flour to the eggs and whisk until there are no lumps. Put onion, spinach and ham in the egg mix and stir to evenly combine

Step 3

Place silicon Springform Pan onto the pressure cooker basket, and pour mixture into the Springform Pan. Carefully lower the basket and Springform Pan into the pressure cooker then close and lock the lid. Bring to pressure and cook for 15 minutes on setting 2

Step 4

Release pressure using the quick release setting on the lid. When indicator button goes down gently remove the lid. Remove the basket and quiche from the pressure cooker and allow to cool for a few minutes

Step 5

Remove quiche from the spring form by taking the side off and carefully sliding the quick off of the glass base onto a serving dish. Serve with a leafy side salad
