All the flavours and nutrients packed in a bag to create a healthy, quick meal!
Make a bag out of wide foil or baking parchment by tearing off a piece 35 x 45cm in size and folding it double. Fold three sides up, sealing it by folding it twice over and firmly. Leave one side open to add ingredients
Bring a pan of salted water to the boil. Cut potatoes in quarters and salt, boil for 6 minutes. Then drain and cool.
In a mixing bowl add fennel (sliced), lemon slices, cherry tomatoes, oil, olives, fish and potatoes and season and combine gently.
Scoop the ingredients and place into the foil bag and add wine. Seal the lid by folding twice over.
Place in oven at 200°C/400°F on the baking tray for 18-20mins (depending on size of fish time may vary).
Once cooked, place the bag on a serving plate and gently pierce to release the steam. The tomatoes and wine will have made a delicious sauce.
