I bought 2 bunches of broccolini and wanted to do something different. There are a couple of tweaks to a recipe I found. Its absolutely delicious.
Toast almonds but frying gently in a non stick pan for approx. 4 minutes. They are ready when they begin to go slightly brown. Put to the side.
Blanche the broccolini in a large pot of boiling water for 2 minutes. Drain immediately then immerse in a bowl of iced water.
Take your Saute Pan and melt the butter in it.
Add lemon zest plus the garlic then stir.
Drain the broccolini in a colander and then add it to the mixture in the pan and allow to heat for 2 minutes.
Add the lemon juice plus pepper, then toss well before serving.
Garnish with slivered almonds. Then serve immediately
I served it with the braised steak from this Chefs Toolbox website and also a mash that consisted of potato, pumpkin and sweet potato. When mashing I added some chopped red onion. YUMMO!
