Astonished how much the kids rave about this dish. It can largely prepared well ahead of time, so the assembly and final cooking is 5 minutes.

Ingredients

  • 3-4 Chicken breasts
  • 2 Tbsn Meal Inspirations Mexican Spice Mix
  • 1-2 packets Corn chips
  • 250g shredded cheese
  • 400g can of chopped tomatoes
  • 2 Tbsn Hot sauce (or to flavour)
  • 1 avocado mashed with a fork
  • 4-5 tbsn salsa
  • 2-3 tbsn Sour cream

Step 1

Rub spice blend into chicken

Step 2

Fry Chicken on medium heat, turning regularly, until cooked through,

Step 3

Layer chips and cheese over an oven-proof plate/dish.

Step 4

Bring tomato, hot sauce to taste (don't wimp out} and splash of water to simmer.

Step 5

Shred chicken. Add to tomato sauce and turn to cover.

Step 6

Layer corn chips, cheese, chicken, corn chips, cheese, chicken etc.. Place under grill to melt cheese.. Enjoy
