This is one of those recipes you can make when there is no time, it's so full of flavour
Soak noodles in warm water until soft.
Heat 20mls oil in wok, fry eggs then take them out.
Add oil in wok, fry garlic until golden brown.
Add fresh chilli, chilli powder and spring onions, stir for 2 mins.
Add minced chicken and stir until well browned.
Add 1/2 quantities of fish sauce ABC sauce and lime leaves, stir quickly.
Add chopped tomatoes and noodles. Stir until cooked. Add the rest of sauces, basil and coriander leaves.
Serve and garnish with extra basil coriander leaves and chopped peanuts.
I feed a family of 4 so I trippled the recipe.
Absolutely beautiful !! I threw in some sliced mushrooms too. All too easy and beautiful blend of spices.
