This classic and super easy lemon slice is perfect for afternoon tea.
Preheat oven to 180°C.
Melt the butter in Saute Pan on medium heat. Remove from heat.
Stir in sugar, add eggs (one at a time) and stir until mixture is thick and glossy.
Add the flour to the egg mixture and stir until well combined. Stir in coconut, lemon rind and lemon juice.
Bake for 30 minutes or until a skewer inserted into the centre comes out clean.
Set aside in the pan to cool completely - then remove from the pan and cut into pieces. Dust with icing sugar.
I can't believe how easy this was to make.Will definitely make this slice again ,very tasty and all made in the one dish.
