  • 125g Fresh lemon juice
  • 3 Eggs
  • 4 egg yolks
  • 150g Caster sugar
  • 200g butter, diced
  • 1 tspn lemon zest, grated finely

Step 1

Insert StirAssist. Add all ingredients. Temp 85C, Time 6 min, Speed 1. Start.

Step 2

Pour into sterilised jars to cool.



Tip: lightly beat the eggs and additional yolks before adding to the other ingredients to prevent the whites cooking too quickly in the curd.
