When life gives you lemons, it's a sure sign you need to make these delicious winter puddings!
Half fill the Wok with warm water, bring to a rapid boil.
Combine all ingredients into Silicone Bowl, stir well.
Divide mixture evenly between Muffin Cups.
Place onto Steamer, cover and simmer on high for 25 minutes or until a skewer inserted into the middle of the pudding comes out clean.
Turn upright and invert onto Cooling Rack.
Serve with lemon curd or lemon custard
Use Silicone Egg Poachers or Tartlets as a substitute for 1-cup Muffin Cups to make 12 smaller puddings.
My absolute favourite lemon pudding by far. I put a teaspoon of lemon curd in the middle of my puddings, gave it that extra kick.
