Ingredients

  • 2 Chicken breasts, diced
  • 1 Onion, diced
  • 2 tablespoons Malaysian Spice Blend
  • 400 mls can coconut milk
  • 500 mls Chicken stock, hot
  • 250g Singapore noodles
  • 100 g snow peas
  • 2 Carrots, peeled and sliced
  • 1 small head Brocolli chopped into bite size
  • 150g Mushrooms, sliced
  • 1 red Red capsicum, diced
  • 1 litre Boiling Water

Step 1

Slice chicken breast carrots mushrooms set aside

Step 2

Slice onion

Step 3

Heat wok

Step 4

Brown onions and mushrooms

Step 5

Add chicken breast and spice blend and cook for 4-5 mins

Step 6

Add all vegetables cook for 4 mins

Step 7

Add hot stock and coconut milk and simmer for 10 mins

Step 8

Place boiling hot water in a bowl place noodles in for 6 mins then drain

Step 9

Serve noodles in bowls, Ladel laksa sauce over noodles

Chef's Tips

Can serve with lime wedge if you like. Can serve with any type of noodles
