This delicious, versatile recipe takes no time to throw together.

  • 1 Red capsicum, diced
  • 2 garlic cloves, minced
  • 2 baby fennel, fronds removed and thinly sliced
  • 2kg pork shoulder
  • 1 can (400ml) apple cider
  • 2 green apples, peeled, cored and sliced.

Step 1

Saute capsicum, garlic and fennel in olive oil in the pressure cooker, until soft (about 5 minutes).

Step 2

Add pork. Roll around to brown. Season with salt and pepper.

Step 3

Pour over cider and bring the cider to boil. Add apples.

Step 4

Close and lock lid. Bring to pressure (when red indicator rises). Lower heat and cook at pressure for 1 hour.

Step 5

Release pressure. Shred pork with two forks, or dice with a knife. Pour over sauce and serve.

Chef's Tips

You can replace cider with white wine or verjuice. It can also be braised in a normal pan for 5-7 hours (pressure cooker is much faster).

This recipe is delicious and loved by my entire family!!

I am excited to share this at our church potluck.
