This delicious, versatile recipe takes no time to throw together.
Saute capsicum, garlic and fennel in olive oil in the pressure cooker, until soft (about 5 minutes).
Add pork. Roll around to brown. Season with salt and pepper.
Pour over cider and bring the cider to boil. Add apples.
Close and lock lid. Bring to pressure (when red indicator rises). Lower heat and cook at pressure for 1 hour.
Release pressure. Shred pork with two forks, or dice with a knife. Pour over sauce and serve.
You can replace cider with white wine or verjuice. It can also be braised in a normal pan for 5-7 hours (pressure cooker is much faster).
