  • 750g Lamb mince
  • 2 Onions, diced very finely
  • 1 cup Fresh Parsley, chopped finely
  • 1 cup Fresh mint, chopped finely
  • 2 Tbs Meal Inspirations Moroccan blend
  • 2 cloves Garlic, minced
  • 1 Red capsicum, diced
  • 2 x 400g cans Tomatoes

Step 1

Combine lamb mince, 1 onion, 1/2 cup parsley, mint and 1Tbs of Spice in a large bowl and mix well. (Alternatively, place onions and herbs in a food processor and whizz until finely chopped, then add lamb mince and Spice and whizz to combine.)

Step 2

Roll mince mixture into golf-ball size meatballs.

Step 3

Saute 2nd onion, garlic and capsicum in olive oil in Pressure Cooker.

Step 4

Add tomatoes, 1/2 cup of parsley and 1 Tbs Spice and bring to a simmer. Add meatballs, and stir to coat evenly.

Step 5

Close and lock Pressure Cooker. Bring to pressure (when red indicator rises), then turn heat to low and cook at pressure for 15 minutes. Agitate the pan occasionally to ensure nothing catches.

Step 6

Remove Pressure Cooker from heat and allow to come off pressure naturally.

Step 7

Serve with rice or couscous
