Say goodbye to your regular boring salads and hello to tasty flavoursome salads!


  • 500g large flat mushrooms
  • 2Tbs Olive oil
  • 1 clove garlic crushed
  • 100g Baby spinach
  • 1 large red onion, thinly sliced
  • 1 cup parsley leaves roughly chopped
  • 1/4 cup mint leaves roughly chopped
  • 1 cup basil leaves torn
  • 3Tbs extra virgin olive oil
  • Squeeze of lemon

Step 1

Slice the mushrooms

Step 2

Heat 2 tablespoons of olive oil in the saute pan over medium heat.

Step 3

Add 1/3 of the mushrooms and garlic to pan, cook until mushrooms are golden.

Step 4

Repeat in batches until all mushrooms are cooked. Cook to room temperature.

Step 5

Combine with remaining ingredients, mix well and place in a serving bowl.

Chef's Tips

Button mushrooms could replace the large flat. They will need to be halved then sauteed.
