This is self explanatory! Nutella & Coffee? Yes Please!

  • 1 cup flour
  • 1 Tbs sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp Salt
  • 1 Tbs Espresso or instant coffee
  • 2 Tbs butter melted and cooled
  • 1/4 tsp vanilla extract (optional)
  • 1 Tbs Nutella (heaps more for drizzling)
  • 1/4 cup Choc Chips
  • 1 cup Milk

Step 1

In a large bowl, sift together the flour, sugar, baking powder, baking soda, salt, and espresso powder.

Step 2

In a separate bowl, beat the egg. Add milk, melted butter, vanilla, and Nutella, and mix well.

Step 3

Add the wet ingredients to the dry and mix gently until mostly smooth. A few lumps are good and okay. Let batter set for a few minutes.

Step 4

Heat pan over medium heat. Coat pan surface with oil or butter — just enough to coat well. When the pan is hot enough, pour two to three tablespoons of batter onto the pan. Sprinkle a few chocolate chips evenly over the uncooked surface of the pancake. When bubbles form in the batter and leave a brief hole when they pop, flip the pancake and let brown on the other side for about 2-3 more minutes, then remove to a plate. Repeat until batter is gone, then serve with your choice of topping. (I used more Nutella. Like there was ever a real choice.)
