This is a classic cafe salad, combining the salty cheese with the sweetness of the pear, the pepperiness of the rocket (arugula) and the crunch of the walnuts.
Mix vinegar and olive oil together in a bowl to emulsify. Season with salt and pepper.
Add the baby rocket. Stir to coat each leaf with dressing. Place rocket on platter or in salad bowl.
Cut off each pear "cheek", leaving the skin on. Slice thinly.
Layer the pear over the rocket. Add the walnuts. Crumble the cheese over the top.
