Mix up a Portuguese favourite Peri Peri with Chorizo for the perfect meal!
Combine Peri Peri Spice with lemon juice. Add the chicken, and toss to coat
Heat 1 Tbs olive oil in the Saute Pan over medium heat
Cook chicken pieces for 2-3mins until browned evenly
Add chickpeas, tomatoes, capsicum, chorizo and stock. Stir, and then place lemon slices on top.
Cover with lid and cook on low-medium heat for 25mins or until chicken is cooked through.
Serve with fresh, crusty bread.
I made this tonight in the pressure cooker. Yummo. Maybe as a conversion for the pc leave out the stock as I had to thicken it, but that did not distract from flavour. Because my lot love spice I doubled the spice. On my favourite list.
