Dates are a favourite and this moist cake has a hint of ginger making it a little different.
Heat Butter, dates, sugar,ginger, water and salt in 2 lt Saucepan over medium heat. When just about to boil remove from heat and add the bicarb soda. Stir to combine and allow to cool for 10 minutes. Add Egg and Flour to date mixture and combine well. Pour mixture into 6 x 1 cup silicone moulds. Add 1 cup boiling water to pressure cooker. Insert basket and insert and stack silicone moulds. Close and bring to pressure on high heat until button pops up. Lower heat and cook for 15 minutes. Release pressure and allow to stand a few minutes before serving
Serve with Cream, Ice Cream or Custard while still warm. Also enjoyable cooled. This recipe can also be oven baked for 20 minutes @ 180 degrees/ 170 fan forced
