Pressure Cooker Lemon Delicious Pudding with easy Lemon Sauce

When you want something sweet, but refreshing all at the same time.


  • 200g Butter, melted
  • 200g Castor sugar
  • 300g Self raising Flour
  • 4 Egg, lightly beaten
  • 2 teaspoons Vanilla essence
  • 1 tablespoon Lemon zest
  • 1/3 cup Fresh lemon juice
  • Lemon sauce .
  • 1/2 cup Butter, melted
  • 1 cup Castor sugar
  • 1/4 cup Fresh lemon juice
  • 1 teaspoon Lemon zest
  • 1 Egg

Step 1

In large Silicone Bowl melt butter for pudding.

Step 2

Add remaining pudding ingredients and mix well.

Step 3

Pour 2 cups Boiling Water into Pressure Cooker

Step 4

Place Silicone Springform Pan onto Pressure Cooker Rack. Pour pudding mix into pan. Cover lightly with foil and lower gently into Pressure Cooker. Close and Lock lid.

Step 5

Place Pressure Cooker on high and bring to pressure - until red button pops up. Once at good pressure, move to low heat and cook for 20 minutes.

Step 6

Once cooked. turn off heat and allow to come off pressure naturally. Once pressure has dropped, remove pan (on rack) from Pressure Cooker and let cool for 5 minutes.

Melt butter in small Silicone Bowl in microwave.

Step 9

Add sugar, lemon juice, zest and egg. Whisk Well.

Step 10

Microwave 4-5 minutes , stirring after each minute, until thickened and glossy.

Step 11

Remove Silicone wrap from pudding, Divide into servings, Pour over sauce and Serve with Double Cream.

Chef's Tips

Can also be steamed in the silicone 1cup muffin in the WOK.

Beautiful recipe, flavor great! Cooking time in my Phillips Pressure cooker was 35-40 min.
