Preheat oven to 180°C (160°C fan forced) for 20 minutes
Heat 30cm Square Roaster on stovetop over medium heat for 3 minutes. Add oil and beef, season with salt & pepper and brown beef for about 2 minutes each side.
Transfer to oven and roast for exactly 40 minutes with a Digital Thermometer inserted into middle of meat. Set temperature to 60°C for medium-rare and press start)
Remove been from oven and rest in a warm place for 10 minutes. Slice beef and drizzle with sauce (steps below).
RED WINE JUS: Place all ingredients in a brazier and cook over medium heat until mixture has reduced to a third of what you began with. This will take about 30 minutes.
Serve with vegetables or mash
