Roasting the veges slightly caramalises their sugars. Sweet and garlicky side dish. Yum
Heat oven to 200C
Put 2 tablespoons olive oil in a bowl, add the carrots and sweet potato. Stir to coat with oil. Place the veges on a roasting rack. add the garlic. Sprinkle with salt and place in oven. Roast for 30 minutes.
When soft, remove from oven. Squeeze the garlic from its skin into a large bowl. Add the sweet potato and carrot and roughly mash. Add the milk and butter and mash through. Yummo.
Don't be afraid of the garlic. When it roasts it loses its astringency and becomes deliciously sweet.
