This recipe is not only perfect as a lunchbox treat for the kids or party food but could even be packaged up in cellophane for end of year presents for family or teachers! A winner for Adults and kids!


  • 280 grams unsalted butter
  • 3 Cups Caster sugar
  • 2 Cups Self raising Flour
  • 1 Cup Cocoa
  • 2 Tsp Vanilla essence
  • 4 Eggs, large
  • 1 Cup Rice bubbles
  • 2 Cups Marshmallows, roughly chopped
  • 400 grams Milk chocolate bits
  • 1 1/2 Cups Walnuts, chopped (optional)

Step 1

Preheat fan forced oven to 170°

Step 2

Melt butter in Square roaster on medium heat, once melted, turn off heat and leave to rest for 2 minutes

Step 3

Combine all dry ingredients (excluding rice bubbles) together in large silicone bowl.

Step 4

Add dry ingredients to melted butter and mix

Step 5

Add eggs and vanilla essence and mix well

Step 6

Add Rice bubbles, marshmallows and 250 grams of the chocolate bits and mix together until evenly combined. Smooth out the top of brownie and place in oven

Step 7

Bake without lid on for 20 mins. Brownie may seem soft at first but will set as cooling

Step 8

Allow to cool in pan for 10 mins and then invert onto Acacia chopping board.

Step 9

Melt remaining chocolate bits in microwave in smaller silicone bowl until runny. Drizzle over brownie. Allow to set for 5 mins

Step 10

Cut and serve. Makes 36 pieces if you cut 6 x 6

Chef's Tips

Serve with little silver cachous or sprinkle with icing sugar-- Enjoy!! :)
