A simple delicious recipe for Romesco Sauce. Serve it with Steaks, roasted Potatoes or even as a dip!
Preheat oven to 160°C.
In a bowl, soak the bread cubes in the vinegar for 20 minutes.
Roast the almonds for 8 minutes and cool completely.
Grind the nuts in a food processor until they are finely ground but not oily.
Add the vinegar soaked bread, tomatoes, paprika, salt and pepper and blitz briefly until evenly pureed.
With the motor running, add the olive oil in a thin stream.
Add chilies if you wish to spice it up.
