A simple delicious recipe for Romesco Sauce. Serve it with Steaks, roasted Potatoes or even as a dip!

Ingredients

  • 2 large, thick slices Italian country bread crusts removed, cut into 1/2 inch cubes
  • 1/2 cup red wine vinegar
  • 200g whole almonds
  • 500g ripe tomatoes, roughly chopped
  • 1 Tbs paprika
  • 1/2 tsp freshly ground black pepper
  • 200ml fruit Spanish olive oil

Step 1

Preheat oven to 160°C.

Step 2

In a bowl, soak the bread cubes in the vinegar for 20 minutes.

Step 3

Roast the almonds for 8 minutes and cool completely.

Step 4

Grind the nuts in a food processor until they are finely ground but not oily.

Step 5

Add the vinegar soaked bread, tomatoes, paprika, salt and pepper and blitz briefly until evenly pureed.

Step 6

With the motor running, add the olive oil in a thin stream.

Chef's Tips

Add chilies if you wish to spice it up.
