Saute Pan Potato Bread with Feta & Thyme

Enjoy a warm piece of sliced potato bread freshly made from your stove-top!


  • 1 & 3/4 cups (270g) Self raising Flour
  • 1 tsp Salt
  • 1 tsp paprika
  • 260g desiree or pontiac potatoes peeled
  • 160g feta cheese cut into 1cm cubes
  • 2 French shallots finely chopped
  • 1 Tbs fresh Thyme leaves chopped
  • 2 x 60g eggs
  • 3 Tbs Milk
  • 1 tsp extra flour for top of loaf
  • butter for greasing
  • 1 tsp extra thyme leaves

Step 1

Sift together flour, salt and paprika

Step 2

Grate potato into flour mixture, mix well.

Step 3

Add shallots, thyme and the cheese. Stir well to combine.

Step 4

Whisk egg and milk together and pour into flour mixture. Stir gently to combine.

Step 5

Butter Saute Pan base and spread dough over the base.

Step 6

Sprinkle lightly with extra flour and thyme.

Step 7

Cover the pan, leaving the steam vents open, and cook over low heat for 20 minutes.

Step 8

Turn dough over and continue to cook for a further 15-20 minutes or golden brown.

Step 9

Serve warm.

Chef's Tips

Cheddar cheese can also be used. Substitute Thyme for fresh chives or rosemary.
