Fresh, quick summer salad.
Segment the grapefruit over a salad bowl to catch the juice. Put the segments to one side.
Add olive oil to the juice. Season with salt and pepper. Stir to emulsify.
Add rocket/arugula to the dressing. Stir to coat the leaves with dressing.
Layer the fennel, olives and grapefruit segments over the dressed rocket.
Other citrus can be substituted. Blood orange is delicious when in season.
