Sicilian pink grapefruit and fennel salad

Fresh, quick summer salad.


  • 1 Pink grapefruit (Ruby Red)
  • 1 tbs extra-virgin olive oil
  • 200-300g baby rocket or arugula
  • 1 fennel, fronds removed and thinly sliced
  • 100g pitted black or kalamata whole olives, drained

Step 1

Segment the grapefruit over a salad bowl to catch the juice. Put the segments to one side.

Step 2

Add olive oil to the juice. Season with salt and pepper. Stir to emulsify.

Step 3

Add rocket/arugula to the dressing. Stir to coat the leaves with dressing.

Step 4

Layer the fennel, olives and grapefruit segments over the dressed rocket.

Step 5

Serve immediately.

Chef's Tips

Other citrus can be substituted. Blood orange is delicious when in season.
