Spaghetti with Prawns and Garlic Sauce

This is one of the easiest and most delicious meals. Perfect for family or entertaining


  • 3 tablespoons Olive oil
  • 3 tablespoons Butter
  • 4 garlic cloves, finely diced
  • 2 tablespoons red pepper, finely diced
  • 2 tablespoons Tomato paste
  • 125 ml dry white wine
  • 450g packet spaghetti or fettucine
  • 500 grams Green prawns, peeled, deveined
  • 125 ml Double Cream
  • salt and pepper
  • 3 tablespoons chopped fresh flat-leafed parsley, to garnish

Step 1

1. Heat oil and butter over low heat in Sauté Pan 2. Add garlic and red pepper. 3. Fry for a few seconds until the garlic is just beginning to colour. 4. Stir in tomato puree and wine. 5. Cook for 10 minutes stirring continuously 6. Cook the spaghetti in plenty of boiling salted water until tender but still firm to the bite. Drain and return to the saucepan. 7. Add the prawns to the sauce and raise the heat to medium. Cook for 2 minutes, stirring, until the prawns turn pink. Reduce the heat and stir in the cream. 8. Cook for 1 minute, stirring constantly until thickened. Season with salt and pepper. 9. Transfer the spaghetti to a warmed serving dish and pour over sauce. Sprinkle with parsley. Toss well to mix and serve at once. Parmesan can be added if desired.

Chef's Tips

Add garlic close to end of cooking time for a more significant garlic flavour. Also, penne pasta can be used
