Healthy, quick and simple as a side dish great with grilled fish!


  • 1 small red onion - finely diced
  • 1-2 teaspoons Spanish Paella spice blend
  • 1 punnet cherry tomatoes, halved
  • 1 40400g can of chickpeas, drained and rinsed
  • 1 big handful fresh baby spinach leaves
  • 100g low fat feta cheese, crumbled

Step 1

Saute onion in a little olive oil on medium heat until soft.

Step 2

Add spice blend, and mix well.

Step 3

Add chickpeas and tomatoes, and cook, stirring, on medium heat for 5 min.

Step 4

Stir in spinach.

Chef's Tips

To serve, top with crumbled feta cheese. Fantastic with grilled lamb from the BBQ, as a side dish with chicken, or serve with fresh crusty bread as a nibble at a party.
