A flavoursome take on an Aussie classic.


  • 200g pitted dates - chopped
  • 100g Brown sugar
  • 50g walnuts - chopped
  • 1 banana - mashed
  • 1 tbsn Meal Inspirations Mixed Spice Blend
  • 1 tbsn Butter
  • 1 tspn bi-carb soda
  • 1 cup Water
  • 200g (1cup) SR flour

Step 1

Heat oven to 180C

Step 2

Combine all ingredients other than flour in a saucepan. Bring to a simmer, stirring occasionally. Take off the heat to cool.

Step 3

Mix flour through the cooled ingredients.

Step 4

Pour batter into a silicone loaf pan. Place on middle shelf in oven. Cook for one hour or until an inserted skewer comes out cleanly.

Step 5

Let cool for 5 minutes before removing from pan letting cool completely on a cake rack.
