  • 1.5 kg beef (chuck steak), cubed
  • 1 Onion, diced
  • 3 cloves fresh garlic, crushed
  • 410 gm Tinned diced tomatoes
  • 2 tblspn Tomato paste
  • 2 tblspn Meal Inspirations Butter Chicken spice blend
  • 2 tblspn Plain flour
  • salt and pepper
  • 500ml Water
  • 1 red capsicum, sliced
  • vegetable oil or olive oil
  • fresh baby spinach leaves

Step 1

1. Trim fat from meat and dice into large chunks 2. Heat oil 3. Cook onion and garlic til transparent 4. Coat meat in flour, salt and pepper then brown in oil with onion and garlic 5. Add capsicum, tomatoes and tomatoe paste, stir 6. Add spice mix and water. Stir. 7.Bring to the boil then close pressure cooker lid and lock. 8. Setting cooking dial to 2. 9. Once pressure indicator pops up reduce heat to low 10. Set timer to 45 mins 11. Release pressure by placing under cold water. 12. Stir through spinach

Chef's Tips

Meat should be falling apart. Serve with mashed potatoe, rice or cous cous.
