The perfect dip when entertaining or having a quiet night in with a movie!


  • 500g frozen spinach, thawed
  • 300g fresh ricotta cheese
  • 300g sour cream
  • 1/3 cup chopped chives
  • 30g packet spring vegetable dried soup mix
  • 1 round cob bread loaf OPTIONAL

Step 1

Squeeze and discard all liquid from spinach. Mix spinach well with ricotta, sour cream, chives and dried soup.

Step 2

Refrigerate for 1 hour or until ready to serve.

Step 3

Slice top of loaf and remove bread from centre to form a bowl and set aside until required.

Step 4

Spoon dip into loaf cavity. Replace lid and serve on a large platter surrounded by reserved bread pieces.

Step 5

To eat, simply break off a piece of bread and scoop up a little dip. Enjoy.

Chef's Tips

Cottage cheese makes a good alternative to ricotta.
