Everyone Loves Banana Cake and most Everyone loves our Sticky Date Puddings. But what about a healthier, sugar free option that combines the two. Try this delicious variation on 2 family favourites.


  • 250g pitted dates
  • 1 1/4 cup Water
  • 90g Butter
  • 1/2 teaspoon bicarb soda
  • 2 cups Self raising Flour
  • 1 1/2 teaspoon ground cinnamon
  • 1/2 cup desiccated coconut
  • 2 Eggs
  • 2 banana - mashed

Step 1

In KitchenAid Cook Processor, Insert Multi-blade. Add dates, close & lock lid and PULSE for 10 seconds. Remove Multi-blade and replace with Stir Assist. Add Water and Butter.

Step 2

Remove Measuring Cup. Heat 85 degrees, Speed 1, 4 minutes until butter has melted. Add Bicarb Soda and QUICK STIR for 5 seconds.

Step 3

Add all other ingredients. Combine on Speed 2 for 1 minutes or until combined.

Step 4

Transfer batter into 24cm Saute Pan and bake at 180 degrees for 30-35 minutes or until skewer comes out clean. Leave to cool in pan for 10 minutes then turn out with Splatter Cover onto Cooling Rack to cool completely. Serve with Whipped Cream or custard,

Chef's Tips

Dairy Free butter could be used to make it Dairy Free. Gluten Free Flour can be used to make it Gluten Free also. Make it even healthier by substituting 1 cup of SR flour with 1 cup of Wholemeal SR Flour.
