It's quick, easy and really tasty. Also contains a lot less fat and sugar than takeaway.
Heat Pressure Cooker over medium heat.
Add the oil and brown the pork.
Add the onion, garlic, ginger and capsicum and sauté for 2-3 minutes.
Drain the pineapple pieces, reserving the juice.
Mix the pineapple juice, soy sauce, rice wine vinegar and five spice in a jug. Add water if required to make 1 cup of liquid.
Add the pineapple pieces and liquid to the pressure cooker.
Close pressure cooker and bring to pressure (2).
Once at pressure reduce heat to low (maintain pressure) and cook for 15 minutes.
Remove from heat and allow pressure to release naturally.
Thicken sauce with corn flour if desired.
Serve with rice or noodles and steamed greens.
Would we have to make a double amount? The sweet-and-sour-pork sounds very yummy.
