Just one word.......YUM! Or maybe two words....YUM YUM!
Peel and cut thick chunks of the sweet potato. Pop into pressure cooker and bring to pressure for 10 minutes.
Once cooked, quick release and drain. Pop cooked mash potato into bowl and mash
Crack both eggs and mash into mash.
Add drained 425g tuna into mix and mix through.
Pour sweet chilli sauce into mix, add salt and pepper to taste and thoroughly mix.
Add bread crumbs until good consistancy
Form patties and coat in bread crumbs.
Shallow fry in saute pan until golden brown.
Serve with fresh steamed veggies. :)
