Sauté the capsicum in olive oil over medium heat for 3 to 4 minutes
Add garlic and spice mix and sauté for 1 to 2 minutes
Prick the skin of each tomato with the Utility Knife so it breaks down but holds its shape during cooking
Add the chickpeas, tomatoes, lemon and water, stir and cover over a low heat for 20 minutes
Season well with salt and serve.
