Bring yourself to Morocco with our delicious Moroccan Chickepea Salad


  • 1 red capsicum - diced
  • 2 garlic - crushed
  • 1 Tbs Meal Inspirations Moroccan blend
  • 1/2 punnet cherry tomatoes
  • 2 cans chickpeas - rinsed
  • 1 tsp lemon zest, or 1/2 preserved lemon
  • 1/4 cup Water

Step 1

Sauté the capsicum in olive oil over medium heat for 3 to 4 minutes

Step 2

Add garlic and spice mix and sauté for 1 to 2 minutes

Step 3

Prick the skin of each tomato with the Utility Knife so it breaks down but holds its shape during cooking

Step 4

Add the chickpeas, tomatoes, lemon and water, stir and cover over a low heat for 20 minutes

Step 5

Season well with salt and serve.
